In 2018 Hakugakusen turned 165 years old. From Fukui prefecture, the hard water used for production comes from the brewery's own ground water source 200 meters below ground. Made in small batches, they don't press by the modern Yabuta method and do as much of the sake making process by hand as possible. Their sake has the delicacy of Fukui's relatively cooler climate, a distinctive hard mineral finish and subtle balance through all of their sake.
