HEIWA SHUZO

Wakayama, Japan

Founded on the location of a Temple in Wakayama prefecture Heiwa actually means peace and in 1952, this brewery was renamed as such to signal the end of World War II. The current and fourth generation, Norimasa Yamamoto, stopped the low grade bulk sake production Heiwa was making just over a decade ago and named his sake KID to signify the new generation of producers focusing on quality rather than quantity. He was among the first to lead this movement of microbrewery culture.
